Creamy Caramel Frosting...
2 cups brown sugar
1/2 cup butter
1/2 cup cream 
1 tsp vanilla
 Boil brown sugar, butter and cream to a soft ball stage (238º). Remove from heat and add vanilla. Beat until frosting is right consistency to spread. Top with nuts.

      <title>Soups</title>
      <description>
Vegetable Bean Soup...
1 clove garlic, chopped         1 large onion, diced
2 carrots, diced                    3 stalks celery, diced
1 Tb olive oil                        1 large can tomatoes, cut up

1/2 tsp oregano                    1/2 tsp basil
1/4 tsp red pepper                1/2 tsp dry parsley
2 tsp salt                               dash pepper
1/2 cup dry lima beans          1 cup split peas
1 cup lentils                           1 cup pinto bean
Sauté garlic and onion in olive oil. Add carrots and celery. Add tomatoes, spices and herbs. Bring to boil and add beans which have been rinsed. Add enough water to cover beans. Simmer 3-4 hours until beans are tender. Stir occasionally and add more water when necessary. Makes 12 cups.

Fudge...
3 cups sugar               1Tbs butter
1 cup milk                   1 tsp vanilla
5 Tbs cocoa
Put sugar, milk and cocoa into heavy sauce pan; stir and boil until it makes soft balls when tested in cold water; take from fire, add butter and vanilla, cool and stir until creamy. Pour on buttered platter and cut into squares..
